Here’s a simple recipe for chicken curry that you can make at home:

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garam masala
  • 1/2 cup plain yogurt
  • 14.5-ounce can diced tomatoes
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup chicken broth
  • Salt to taste
  • Cilantro for garnish

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook until fragrant, about 3 minutes.
  2. Stir in the cumin, coriander, turmeric, chili powder, and garam masala. Cook for 1 minute.
  3. Add the yogurt and tomatoes. Bring to a simmer and cook for 5 minutes.
  4. Stir in the chicken and broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is cooked through.
  5. Season with salt to taste.
  6. Garnish with cilantro and serve over rice or naan bread.

Tips:

  • If you don’t have fresh ginger, you can use ground ginger.  
  • You can also use a different type of protein, such as shrimp or tofu.
  • If you want a thicker curry, you can add more yogurt or tomato paste.  
  • If you want a spicier curry, you can add more chili powder.
